Beef Patties

Beef patties are a great snack to try and make at home. I got this recipe for beef patties from my SIL's sister who attended some course in baking.
 
Ingredients:
1 cup cooked beef mince

For the PUFF PASTRY:
All-purpose flour (maida) – 220 gms
Puff fat – 115 gms – for folding
Shortening (ghee) – 20 gms – for mixing
Salt to taste
Chilled water to knead the dough

Method:
  • Make a dough with the flour, salt and chilled water, knead in 20 gms shortening and clear the dough.
  • Relax the dough in a cool place for ½ an hour covering with a wet cloth. 
  • Sheet the dough in a rectangular shape. 
  • Spread 115 gms fat evenly on the dough sheet. 
  • Cut the sheet vertically in 7 or 8 strips in such a manner that each subsequent strip is broader than the preceding strip. 
  • Roll the first strip like a swiss roll. 
  • Keep this roll on the next strip and roll. 
  • Similarly, roll all the subsequent strips. 
  • Relax the folded dough for ½ hr. covered with a moist cloth in a cool place. 
  • Sheet the dough and cut into squares/rectangles. 
  • Put the beef mince filling and fold it, pressing lightly. 
How to make beef patties
  • Dust a baking tray lightly with flour .
  • Keep the beef puffs on the tray and apply beaten egg on top of the puffs. 
  • Bake at 220°C till golden brown.

Beef Cutlets

Another hot favourite, the beef cutlets! Serve beef cutlets with French fries or put one in a bun or pao with a dash of mayonnaise and some salad and you have an enjoyable snack!
Beef cutlets
Ingredients:
½ kg cooked beef mince (basic recipe)
4 onions, chopped fine
corriander leaves, chopped fine 
1 egg
2 green chillies, chopped fine
potato mash of two potatoes
semolina (rawa) for coating the cutlets
Oil for shallow frying the cutlets

Method:
  • Lightly grind the cooked beef mince on a grinding stone or in the mixer.
  • Add all the ingredients to it except the oil and semolina and mix well.
  • Shape into balls.
  • Flatten each ball and roll in the semolina.
  • Shallow fry on a griddle.
  • Drain on kitchen paper.
  • Makes about 20 cutlets.

Beef Mince (Basic recipe)

Beef mince is used in a lot of my recipes so here's a basic recipe to cook beef mince. Use it to make potato chops, beef cutlets or beef patties.
Beef Mince - basic recipe
Ingredients:
½ kg beef mince
2 onions, cut fine
1 teaspn magic masala
2 teaspoons ginger garlic paste
1 teaspn salt
1 teaspn sugar
1 tablespoon vinegar
2 green chillies, chopped fine
a few corriander leaves, chopped fine
1 to 2 tbspns oil

Method:
  • Heat oil in a pressure cooker and fry the onion.
  • Put together all the remaining ingredients except corriander leaves.
  • Mix and add to the fried onion. 
  • Close the pressure cooker and cook on simmer for 15 minutes after the first whistle.
  • Let off steam and open the pressure cooker. Evaporate the liquid if any.
  • Garnish with chopped corriander leaves.

Potato Chops with Beef Mince

Potato chops with beef mince are an all-time favourite with kids and adults alike.They go well as a snack for school tiffin too or even as a side dish.
 
Ingredients:
¼ kg cooked beef mince
mashed potato (of about 6 medium potatoes)
4 onions, chopped fine
1 egg
Semolina (rawa) for coating (optional)
oil for frying the onion and the chops

Method:
  • Heat a little oil in a non-stick vessel and fry the onion.

  • Add the cooked beef mince and stir for some time. Put off flame and keep aside to cool.

Shape the mashed potato into balls
  • Make balls of the mince once it has cooled.

  • Take a ball of potato mash and flatten it in the palm of your hand in a cup shape.

  • Place a ball of mince in it.
 
  • Bring together the potato mash all around the mince ball so as to cover it completely.
     
  • Flatten the chop a bit.
  • Dip in beaten egg.
 
  • Coat with semolina if you so wish.
  • Shallow fry on a griddle on both sides till golden brown.

  • Serve with tomato ketchup or a salad.
