Brinjal Pickle (Aubergine Pickle)

The brinjal pickle is a great accompaniment with rice and is enjoyed by both kids and adults alike. You can also take a look at my aunt's brinjal pickle recipe.


Ingredients:
4 lbs. brinjals (aubergines)
1 lb. sweet oil
2 oz. salt
1 lb. sugar
1 oz. green chillies cut length-wise 1 bottle vinegar
For masala :
2 oz. cumin seeds
1 oz. saffron powder
4 oz. red Kashmiri chillies
1 oz. mustard
½ lb. garlic
1 oz. methi seeds
1 oz. ginger

Method:
  • Cut brinjals into one inch cubes and apply salt.
  • Grind all the masala ingredients in as much vinegar as is required.
  • Boil remaining vinegar.
  • Add the ground masala.
  • Next add the brinjals, curry leaves and green chillies.
  • Cook for about ½ hour.
  • Add more salt if required as per taste.
  • Cool and bottle.
